I am not a big drinker or lover of corned beef and cabbage, so St. Patrick’s Day isn’t really a holiday I celebrate too much. However, since my mom is a Kerrigan, I felt I’d better at least do something so I don’t get kicked out of the family. Hence I spent (only a small fraction of) my lunch break making these bad boys.
I don’t remember the last time I made Rice Krispie Treats, but I chose this dessert because it’s very simple and fast, and (I like to think) a little bit less fattening than some of the other choices on the sweets continuum.
Here is the recipe I used. The whole process took about 15 minutes. The longest part was waiting for the marshmallows to melt, but I bumped up the heat a tad to medium-low and it went a lot faster after that.
